I opted for smokey heat with chipotle spice and cilantro today.
Here’s what you’ll need:
16 ounces of dried garbanzo or white beans
2 whole cloves of garlic
2 tablespoons of tahini
1/2 to 1 tablespoon of crushed chipotle peppers (I used Smokey Chipotle and Paprika Spice)
1 medium lime
2 tablespoons of fresh rough chopped cilantro
1/2 cup of good olive oil
salt and pepper to taste
Follow directions on package to hydrate beans. Rinse and drain.
Add to food processor. Pulse twice to roughly chop beans.
Add tahini, garlic, chipotle seasoning and and lime juice. Pulse.
Through the opening in the top pf the processor slowly add olive oil while setting speed to 2 or medium. Continue until desired texture.
Salt and pepper to taste.
