Slow Cooker Black Bean Chili

279504720595196484_ZkHh1nut_cWinter is fast approaching… and nothing is more comforting to me than pulling out our slow cooker and all of the possibilities.  From soups to stews to mulled cider this is perhaps my favorite appliance.

Using a slow cooker is so easy, you literately set it & forget it.  I usually put everything together the night before and refrigerate or before leaving for work.  Chili is always a favorite of ours, especially Black Bean Chili.

What you’ll need:

1 lb lean ground beef , browned

1 small yellow onion, finely diced

2 cloves of garlic, minced

3 cups dried black beans, re-hydrated

1 cup dried dark red kidney beans, re-hydrated

2 cans tomato sauce

2 cans petite diced tomatoes

8-10 oz of beef broth

1 tbsp olive oil

4 tbsp Homemade Chili Seasoning, or 1 packet of store bought chili seasoning
