Who doesn’t enjoy having dinner ready when you get home? If you are anything like me, that is a rare occasion. But, with a little bit of prep work ahead of time and a crock-pot, anyone can come home to a delicious homemade meal! One of our new weeknight favorites is Cannellini Bean & Sausage Stew, simple to assemble but full of big flavor!
What you’ll need:
4-5 qt Crock Pot
1 lb ground Italian Style Sausage
1 small Vidalia Onion, finely diced
1/2 cup Pearl Onions
2 cups Celery & Carrots, diced
2 cans Cannellini Beans, rinsed
2 cans Petite Dice Tomatoes
1 tbsp Olive Oil
1 tsp dried Basil
1 tsp dried Greek Oregano
1 tsp ground Fennel Seed
2 Bay Leaves
4 cups Chicken Broth
ground pepper & salt to taste
To prepare:
In a large skillet add 1 tsp of oil and sausage; sauté until browned, set sausage aside. In same skillet add onions, carrots and celery add remaining oil and sauté until diced onions are translucent. Return sausage to pan and warm through.
Add rinsed beans to crock pot top with sausage and veggie mixture and tomatoes. Add herbs, pour in chicken broth and stir to gently combine. (If preparing the night before store all except the broth in fridge until morning then add broth just before turning crock pot on).
Let cook on high for 4 hours or on low for 8 hours. Serve with a bit of shredded cheese and a hot roll or biscuit.
